There are plenty of Scandinavians in London. We have all chosen to live our lives here, and most of us are, most of the time, very happy with that decision. But there will always be things that we miss from our home countries. It can be TV shows or old family traditions, but one thing I think we all miss on a regular basis is the food! Ocado must have heard our Scandinavian prayers, because they have made room for a Scandinavian aisle in their range – brilliant! Here you will find anything from your favourite flavoured Absolut Vodka, Herring or baking mix, to the ever important Kalle’s Kaviar, ginger thins, meatballs and fresh yeast. Us Scandi’s are also spoiled with choice when it comes to cheese – the cheese counter in any Scandinavian grocery store is varied and very impressive. Ocado has picked up on this and are offering Herrgård AND Västerbotten cheese (grated or block). Below is the recipe for a quiche commonly found on Swedish tables on any special occasion – Västerbotten cheese quiche!

You will need…

For the crust:

  • 150g salted butter
  • 350ml flour
  • 2tbs cold water
  • 1/2tsp salt
  • 1 egg, to brush on

For the topping:

  • 200ml milk
  • 200ml single cream
  • 300g grated Västerbottensost (like this one: )
  • 4 eggs
  • 1tsp sugar
  • salt & pepper to taste

This is how you do it:
Start with the crust, and turn the oven on to 200C. Crumble the butter into the flour and add water and salt. Quickly work into a smooth dough. Press the dough out into a pie dish (25cm diameter would be perfect). Pierce the dough with a fork a couple of times, and let it sit somewhere cold for 15-30 minutes. Whisk the egg with a fork and brush the crust evenly before popping it into the oven for 10-15 minutes.

To make the topping, pour the milk and cream in to a saucepan and bring to a boil. Remove from heat and stir in the grated cheese until it has melted. Add the eggs and sugar to the mixture, and season to taste.

Pour the topping over the crust. Turn the oven down to 140C, and let quiche cook for 30-35 minutes. Serve the quiche hot or cold, with salad and bread. Or – with crayfish if you’re throwing a Swedish-style crayfish party!


The 25th of March is in Sweden know as Waffle Day. Although we’ve already passed it this year, we figured there’s no harm in a little belated celebration. And really – couldn’t any or every day be a Waffle Day?

To make Swedish waffles, you will need a waffle iron. Clas Ohlson sell them for only £14.99! Go get, you won’t regret it:

Here is the recipe:

Time: about 30 minutes.
Makes 6-10 waffles

You will need:

  • 100g butter, salted is fine
  • 300ml flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 400ml milk


  • whipped cream
  • jam, raspberry is the classic for waffles!
  • fresh berries
  • syrup
  • vanilla ice cream

Melt the butter and let it cool down. Mix flour, baking powder and salt in a bowl. Stir in half of the milk and whisk until smooth. Add the rest of the milk and the melted butter and whisk until smooth.
Make sure that the waffle iron is HOT. Brush butter onto both top and bottom halves of the waffle iron before pouring about 75-100ml of batter onto the iron and close it. Leave to cook for about 1-2 minutes depending on just how golden you like you waffles.

This weekend we’ll be having a good ol’ Swedish classic: Flying Jacob. Have you heard of it?

Has it got chicken? Check! Has it got peanuts? Check! Has it got a crazy name? CHECK!

This is how you do it:

You will need (to serve 4 hungry Vikings)

  • approx 1 kg grilled chicken
  • 1-2 bananas
  • 200ml single cream
  • 150ml chili sauce
  • 2 tsp curry powder
  • 140g smoked bacon lardons
  • 100ml salted peanuts

Turn your oven onto 225 degrees. Remove any bones from the grilled chicken, tear it up into smaller pieces, and put them in an oven proof dish.

Peel the banana(s) and halve lengthwise and then halve the halves so that you end up with 4 ‘quarters’. Place the banana quarters on top of the chicken pieces in the oven proof dish.

Whip the cream and mix in the chili sauce and curry powder. Pour the mixture over the chicken and bananas, and pop into the oven for 20 minutes.

In the meantime, fry the lardons in a pan over a medium heat until crispy. Let them sit on a sheet of kitchen roll for a minute before sprinkling them and the salted peanuts over the baked chicken and bananas. Serve with rice and salad.


As a new feature here on Sola Kitchens’ blog, every Friday we will share a new Swedish recipe for either a starter, main or dessert. Come take part in our treats for the weekend!

These potatoes are deliciously creamy and comforting, with a mild hint of dill. Accompanies smoked salmon perfectly.

Serves: 4-5 Preparation time: 30mins Cooking time: 10mins

You will need:

  • 16 potatoes, any type will do as long as they are firm rather than crumbly
  • 2 tbs flour
  • 2 tbs butter
  • 400 ml milk
  • 100 ml chopped fresh dill
  • Salt and white pepper to taste

Peel or scrub the potatoes (depending on the thickness of the peel), cover them with water in a large saucepan, add a pinch of salt and boil the potatoes until cooked through.

While the potatoes boil, start preparing the cream sauce:
Melt the butter in a saucepan. Stir in the flour. Turn the heat down and add the milk slowly whilst stirring. Taste the sauce and add salt and pepper until you are happy with the flavour. Sometime a pinch of sugar can enhance the flavour too. Keep the sauce warm.

When the potatoes are ready, drain and let them cool down a little. Once they are not too hot to touch, slice or dice them into fairly large pieces – about 2cm thick slices or cubes. Gently stir the potatoes and dill into the sauce and taste to make sure no further salt or pepper is required.

Serve immediately with smoked salmon.
